1 - 16 oz. Pkg. firm tofu

Sauce:
*1/4 cup vegetable Stock
*1 tbsp Soy Sauce
*2 tsp Sugar
*1 tsp Sesame oil
*1 tbsp canola oil

Other ingredients:

*1/2 cup sliced Onion
*4 cloves garlic, thinly sliced
*1 fresh jalapeno chile (with seeds) thinly sliced
*2 tsp salted black beans, rinsed and drained (found in Oriental
supermarkets)
*3 Green onions, cut into 2 inch slices
*2 tsp. Cornstarch, dissolved in 1 tbsp water

Cut tofu into pieces about 1/2 inch cubed.
Combine sauce ingredients in a bowl.
Using a wok or skillet, heat until hot. Add Canola Oil, swirling onto
sides. Allow to almost smoke. Add onion, garlic, jalapeno, and black
beans. cook, stirring; until it becomes fragrant, about 10 seconds. Add
the tofu and cook, turning them once; until golden brown, about 2
minutes. Now add green oinions. Allow to slightly wilt. Stir in stirred
cornstarch mixture, and mix well to thicken and boil. Serve
immediately.
Will serve 3 or 4 people

That sounds delicious!

About the green onions; what do you mean "two inch slices"? Do you
mean cutting the three green onions into 2 inch long pieces and cook
them that way?
